Dick Taylor Blackberry Bergamot 65% (Seasonal)

We loved Blackberry Bergamot Microbatch bar so much, we turned it into our Spring Seasonal Release! Sweet, dried blackberries and a hint of bergamot oil are mixed into our silky 65% dark chocolate from Belize. The blend of bergamot and berries creates a perfect balance of citrus and floral notes, complimenting the lightness of this chocolate.

Dick Taylor Sonoma Brothers Straight Bourbon Whiskey (Seasonal)

Barrel aged 6 months.

For the third release in our Barrel Aged Chocolate line, we turned to friends from artisan craft distillery; Sonoma Brothers Distilling. Using heavy-char new American oak barrels from their three year aged 'Straight Bourbon Whiskey', we fill and age the highest quality certified heirloom cacao from Belize for six months. The dry aging process allows the cocoa nibs to absorb the aroma and flavor of barrel and the spirit. Once fully aged, we use these delicious nibs to handcraft a 70% dark chocolate bar by adding only cocoa butter and cane sugar. The finished chocolate bar is sweet with complex & pronounced oak and bourbon flavors.

Qantu Chocolate Dreams of Cashmere - Goat Milk - 55%

This chocolate bar highlights the sophistication of goat milk. Its ingredients join in a ballet of delectable flavours, without one encroaching on the other. Canadian goat milk provides an elegance that beautifully envelops the aromas of cacao, all in a barely sweet bite. Elfi and Maxime concocted this bar with ancestral Bagua cacao beans, which is bound to will delight lovers of goat milk and cheeses. We dare you not to eat the entire bar all at once!

Qantu Chocolate Don Maximo's Quest 80% (Limited Edition)

The cocoa for this chocolate comes from a single plantation: Bellavista, which belongs to our friend Don Máximo. A true cocoa aficionado and collector of varieties with unique peculiarities, Máximo ferments and dries the cocoa beans himself, experimenting with different methods. Máximo have complete Qantu's admiration for his commitment to growing cocoa and preserving pure and rare varieties.

Kimbiri, Cusco, Peru

Tasting notes:
The eye: dark brown
The nose: palo santo, touch of pepper.
The mouth : Notes: almond, cedar, woody with a slight astringency reminiscent of pecans.
Overall: moderate fruity like blackcurrant.

Letterpress Tranquilidad, Bolivia 70%

Tranquilidad is wild-harvested cacao from Bolivia and fermented by world-renowned cacao expert Volker Lehmann. The Heirloom Cacao Preservation Fund had these beans genetically tested by the USDA and it's been verified 97.3% Boliviano, also known as Beniano cacao. You've heard of Criollo, Nacional, Porcelana? Beniano is in a class all it's own.

Letterpress Hacienda Azul, Costa Rica 70%

Hacienda Azul is a small farm located in the rural town of Turrialba in the province of Cartago a couple hours east of Costa Rica’s capital, San Jose. It is managed by the Zeuner family and employs 8 people full time. The famed CATIE university of agriculture is also located here and has provided 5 different clones to the farm. The beans are washed prior to drying and we’ve found this cacao fascinating by its versatility.

Letterpress Esmeraldas, Ecuador 85%

This cacao is grown in the province of Esmeraldas, an area not typically known as a cacao producing region of Ecuador. Costa Esmeraldas is a family business, entirely owned and managed by the Salazar family. This single estate farm was established on reclaimed cattle pasture and is currently planted with approximately 100 hectares of 5-year old Nacional hybrid cacao (clones EET-95, EET-96, and EET-103). The farm is currently expanding, and will include 10 hectares of a traditional Esmeraldas cacao varietal that was cultivated in isolation for over 100 years from the typical Nacional cacao grown in the rest of the country. The original farms planted with this cacao are currently being cut down and replaced with oil palm and CCN-51. The farm is located less than 10 miles inland of the coastal town of Muisne. A brand new, high efficiency fermentation and drying facility was designed by Cacao Services and constructed in a dry microclimate about 15 miles from the farm near the town of Tonchigue. The facility design allows production of unusually consistent and clean cacao with an efficient movement of material that reduces worker injury and fatigue.

The color is strikingly dark for a 85% dark chocolate, but belies its mild flavor.
