In 2017 Mark Schimmel met Jose Maria Pascacio Muñoz from Finca la Rioja and that was his deep dive into different cocoa genetics and fermentation. He used different fermentations from the Soconusco variety through the years. Giving feedback and striving to the best quality. He is very happy with this cooperation and this gives Krak the privilege to work with experimental nano lots like the AoC gold 2023 winner “Huixtla”. And the descendants from the oldest genetics where “Don Moisés” started his plantation a decade ago.

“The history of cacao in the Southeast of Mexico dates back to pre-colonial times. Cacao was not only an integral part of the culinary and religious traditions of the region, but it was also used as currency. Chiapas was the center of cacao commerce in Mesoamerica when the Spaniards reached the area in 1522. The first cacao brought to Europe to the Spanish court came from Chiapas.

Nowadays, the states of Tabasco and Chiapas produce the majority of cocoa in Mexico. Tabasco produces about 18,000MT and Chiapas another 4,500MT. Of the total, less than 100MT is exported each year.

Finca La Rioja is in Cacahoatán, Chiapas. Cacahoatán means the “Place of Cacao” in the ancient Toltec language. The plantation was established in the beginning of the 1900’s by the Andalucian immigrant Moisés Mugüerza Gutiérrez who planted cacao along with coffee and other crops. Don Moisés collected criollo cacao varieties from the South of Mexico, Belize and Guatemala which he further developed in his nursery. With the introduction of agrarian land reform policies under the government of Álvaro Obregón after the Mexican Revolution, a great portion of the plantation and the nurseries of Don Moisés were expropriated.

Almost 100 years later, the descendants of the Mugüerza family continue the cacao heritage they are so proud of. Finca La Rioja is now owned by a great grandson of don Moisés and he still fondly grows some of his ancestor’s old varieties in his finca. The yearly harvest of these old varieties including pentágona, lagarto and other criollo varieties is of approximately 70-240 kilograms a year.”

Krak Chocolade is created by Mark Schimmel in Ermelo, The Netherlands, about 18km from our office! Although Krak Chocolade officially launched in 2013, Mark’s journey towards chocolate making developed over many years. Mark is a talented pastry chef who worked in three-Michelin-starred restaurants throughout Europe, before starting his own pastry and chocolaterie business. The more he worked with chocolate, the more he wanted to create it himself, from bean-to-bar. After initial experiments with micro batch chocolate making, Mark upgraded his equipment and started working with some of the finest cacao origins in the world.

About Krak

  • Mark creates a mixture of dark and milk single origin bars using ethically sourced cacao from small farms and estates around the world. Currently he’s using beans from Belize, Colombia, Cuba, Madagascar, Vietnam, The Philippines, Tanzania, Mexico and Saint Vincent & The Grenadines.
  • Krak Chocolade sources its cacao beans via Amsterdam’s Daarnhouwer & Co., which guarantees traceability, diverse origins and high quality, fine-flavour cacao that is usually certified organic.
  • Mark works with top chefs throughout Europe, creating chocolate that is specific to the chef’s needs, in terms of flavour profile and texture.
  • Many of the bars have won awards at the International Chocolate Awards and the Academy of Chocolate Awards. The Sierra Nevada 55% Milk Chocolate won the Golden Bean Award for best bar at the Academy of Chocolate Awards 2021.
  • Mark wants to transform the quality of chocolate used in fine dining restaurants, where the highest quality ingredients are used, but often alongside cheap industrial chocolate.
  • All Krak Chocolade bars are wrapped in recyclable paper, with cacao origin and chocolate information hand stamped on each individual bar.

The Krak range

A wide range of small-batch single origin dark and milk chocolate, available in 80g or 30g bars. Krak bars are made in very small batches with a limited amount of each available. Cacao origins are often rotated.

A small range of unique flavoured bars, currently including Hibiscus and Vanilla White Chocolate and Juniper Milk Chocolate.

We ship by DHL or PostNL. These usually deliver within 24 hours (within Holland and Belgium). For other countries the lead-time is about 2-3 days. After your order is processed and ready to ship you will receive a notification by email, detailing the scheduled delivery date and a Track & Trace code.

We can arrange transportation for orders to customers outside the EU and will provide an estimate of the shipping cost. Alternatively, you can arrange shipping & collection yourself.
